The "Etagenzwiebel" is also called air- or perennial- onion and instead of flowers it forms small, above-ground brood onions. The leaves and onions are good for soups, salads, quiche, dips and sauces and the onions can also be pickled in vinegar like pearl onions. Fried straight in the pan, they taste deliciously sweet and hot. The onions only have to be planted once and you will enjoy the in the garden for many years to come.
